Curried Cabbage Mince with TextNow, I bet the title of this recipe really grabbed you!  Sounds very enticing doesn’t it?  STOP!  Before you click away, I encourage you to think again because although Curried Cabbage Mince doesn’t sound too appealing, it is actually a really tasty and easy mince recipe.

A version of this was given to me by a friend when I first moved out of home and was learning to cook.  She had a little more experience than me in the kitchen (hi Skip), so pulled out all her beginner recipes to help get me started.  And as we all know, often the easy/beginner/simple recipes are the best.

Apart from that, with the other flavours thrown in here, the cabbage flavour is not as strong, so it is also a little more appealing to the kids.  Give it a go, particularly during the busymiddle part of the week.  You (or the family) won’t be disappointed.




Curried Cabbage Mince Recipe

 

Ingredients

1 tablespoon oil

1 medium onion, chopped

500g mince

1 tablespoon curry powder

3 cups shredded cabbage (approx. 1/4 large cabbage)

1 medium carrot, chopped

3 cups chicken stock

170g dried egg noodles (or 2 x 85 g sachets instant noodles)

Method

Heat oil in large frying pan or wok over low heat.  Saute onion until soft.

Stir in curry powder for about 1 minute, or until fragrant.  Add mince and brown well.

Stir through cabbage and carrots for a minute.  Break up noodles, add to pan along followed by the stock.

Bring everything to the boil for a few minutes, stirring well.  Once the noodles are cooked, season to taste and serve.




The Klutzy Cook Notes

  • If you use instant noodles, the flavour sachets could be used.  In this case, replace the stock with water otherwise the dish may be too salty.
  • Some egg noodles my need to be prepared before adding.  Check the pack for instructions, and if they require more than a few minutes in boiling liquid, then prepare before adding to the final dish.  The liquid added should also be reduced to around 2 cups.
